Slow Cooker Salsa Chicken & Rice Bowl

- Our Easy Salsa Chicken is packed with flavor and made with just a few simple pantry staples. Add chicken, your favorite salsa, taco seasoning, beans, and corn, then let it cook until tender and ready to shred!

Prep Time: 10 minutes
Cook Time: 4–6 hours (Low) or 2–3 hours (High)
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 (16 oz) jar salsa
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 (15 oz) can black beans, drained and rinsed
- 1 can corn
- 2 cups cooked white or brown rice
- Juice of 1 lime
- Fresh cilantro, chopped (optional)
Toppings
- Shredded cheddar or Mexican blend cheese
- Sour cream or plain Greek yogurt
- Diced avocado
- Green onions
- Fresh pico de gallo
- Tortilla strips
- Jalapeños
Instructions:
- Place the chicken in the slow cooker.
- Sprinkle with taco seasoning.
- Pour in the salsa and chicken broth.
- Cook on:
- Low: 4–6 hours
- High: 2–3 hours
- Shred the chicken with two forks.
- Stir in the black beans and corn. Cook another 15–20 minutes until heated through.
- Add the lime juice and stir.
To Serve:
Spoon cooked rice into bowls. Top with the salsa chicken mixture and finish with your favorite toppings.
